August 2nd Is Ice Cream Sandwich Day

Apparently there is now a "day" for everything, so why not ice cream sandwiches? The ice cream sandwich was my favorite treat growing up. Then my sisters and I decided to create our own version by taking home made cookies, inserting a slab of ice cream between two of them, freezing the newly formed sandwich, and then thoroughly enjoying them. This works with pretty much any kind of cookie, but my personal favorites are: ginger drop cookie sandwich, chocolate crinkle cookie sandwich, red velvet crinkle sandwich, and (of course) chocolate chip cookie sandwich!  Why not create your own version? And, of course, you can enjoy them well beyond August 2nd.
